We toured this local cheese factory. They did not really show us how they made the cheese, but did talk about the process and about how long it stays fresh after breaking the wax seal. Zack loved their "home-made" cheese, their signature cheese, which seemed to be a mild cheddar. They had many varieties available for sale, such as guda, brie, and several flavors of the signature, such as herb and jalapeno. We did not buy any because they only had rather large wheels available, and we are travelling light.
